AUBERGINES WITH TOMATOES

Per 4 persone:
12 slices of dried aubergines Mister Lupino
8 ripe tomatoes
1 clove of garlic
parsley
3 spoons of oil
salt, pepper

 
 
 
Preparation:
Boil dried aubergines Mister Lupino in water (70%) and vinegar (30%) for 1-2 minutes; let them drip and dry with scottex.
Boil tomatoes in water for 1-2 minutes, peel them, remove seeds, and chop them. Put in a bowl and mix with chopped garlic and parsley. Season with oil, salt and pepper.
Place aubergines onto a dish, strew with chopped tomatoes, season with garlic and parsley sauce and serve.
